I just started to make leek & potato soup and cut into this leek (purchased 3 days ago) and it has this strange pink stuff on the inside. I’ve never seen it before. Any ideas?

Sadly, you must have merely potato soup, unless you (and you should) have an onion tucked away. Just saute that onion first before putting in the soup.

Fungus/mold. Not sure what kind. Also, it looks like that leek either is very old, or has been frozen and thawed, hence the fungus.

Sorry about your soup.
Good news, though: if you have sausage or bacon, onion, garlic, and cream, you can make bootleg zuppa toscana. Just chop and sautee bacon or sausage, remove from pan, then fry chopped onion/garlic in the drippings. When that’s done, throw in your potatoes, your broth, cream, red pepper flakes, and Italian herbs. It’s even better when you add kale at the end, but if you don’t have that it’s still a half decent soup.

Red mold maybe? I have only seen red mold once, idk it just oozes bad vibes. I wouldnt touch it. Mold can be very bad
